Barbecue Rotisserie Tips

So you've got some potential rotisserie wood burning BBQ pits action going that will have the neighbors lining up at the door. But first you need to know how to set up that barbecue rotisserie, right?

Charcoal Barbecue
Rotisserie Set Up

First, if you've got one of those large charcoal grills with rotisseries, add the briquets. Maybe 50 max for medium heat. 60 or more max for high. Use your starting method of preference and get them heating up.

Let briquets have at it until they're showing gray ash. This may take 25- 30 minutes. Once there, use your tongs to position them around the edges of the firegrate. With the majority at each end.
Don't' forget to add 5 or 6 briquets to each end at this point. And continue adding them at roughly 30-minute intervals during cooking.

Dig out another of your barbecue spit roast accessories. The drip pan. Nestle it between the coals under where the meat will be.

Put the rotisserie unit in place. If need be, <gasp> read the manual that came with your barbecue rotisserie.

Carefully load the meat on the spit using the spit forks to hold it in place and help balance it. Stick the spit into the motor. Turn the motor on making sure the drip pan is positioned under the meat.

If possible adjust the coals so they're no more than four inches away from the meat.

Close the lid.

Open the vents.

Cook away using your bbq grill with rotisserie to create meat magic. Adding more charcoal as suggested to keep the temps constant.

Here's more on how to control heat and cooking time.

Gas Barbecue Rotisserie

What about gas? Turn the burners on and close the lid to preheat your grill. This might take 10 minutes?

Turn the center burner off. Load the spit. Follow the same drip pan set up as with charcoal. Cook until done.
