Handy barbecue spit roast accessories

It's a fact! No rotisserie wood burning BBQ pits are complete without some decent barbecue spit roast accessories.

Aside from meat clamps, spit-rod you might also consider a cradle style rotisserie. These get rave reviews in some backyards.

One common accessory is a rotisserie basket. Some feel these make barbecuing most meats much easier than on a spit.

These come in two types - the tumble basket and the flat basket.

Tumble baskets are affixed to the rotisserie rod or skewer. They're basically just a circular basket with an opening.. The food tumbles around in the basket as it spins over the fire of the rotisserie wood burning BBQ pits. Hence the name - tumble basket.

They're great for barbecuing things like chicken wings, corn on the cob, or summer squash.

Ideally you want to use a tumble basket with food that is likely to stay together or stay on the bone when rotated. Otherwise you'll end up with, well you know, barbecued mish mash. Sometimes a bit of twine helps.

Then flat basket is a couple of hinged grates that hold the food snuggly between them. A flat basket works for barbecuing "flat food" like fish.

Other tools of the backyard barbecue trade would include tongs. Two pair please. One pair for positioning coals, grates and such. And a (different) pair, preferably stainless, for handling the meat.

Oven mitts are a must to keep your hands from cooking.

And don't forget a meat thermometer. A good one is an absolute must have. That last thing you need is to inflict food poisoning on guests from under-cooked barbecue.
