No self respecting back griller should even try to function without a good pair of stainless steel tongs - heat-proof wooden grips please.

Remember, poking meat with a fork allows the juices to run out which can leave you with something akin to dried out beef jerky. That's why you want gripper tongs. So you can gently caress the meat. Not poke and prod it like an intern on their first day.

Standard issue tongs have no spring to assist your grip. In that case you're relying on arm power.

Of course that suggests you can get spring loaded tongs. These are good since they open and close with minimum effort on your part.

Combo tongs would be a step up. They may have pincers on one side and a spatula for flipping on the other.

When it comes to tongs longer is better. Since the longer the tongs the farther away your hards are from the heat of the grill.

Another good accessory is an oven mitt. The "Ov-glove" is heat resistant even. Not stardard issue with most barbecue grills. Still it's nice to have.
