Preventing Flare UpsThere's more to the phrase "the fat's in the fire" than the typical backyard barbecuer may realize
Keeping the grill covered is one way to prevent flare ups. Since you're depriving the fire of the oxygen needed to ignite. Which is just smart to begin with, since a covered fire is a hotter burning fire. That will result in your food cooking faster. And should a flare up break out, lowering the lid is the best way to extinguish it. For sure you don't want to spray water on any flare ups. Spraying water on a grease fire can result in instant, red hot steam. That boils up directly into your face. Giving your face a red glow that's not from the sun isn't my idea of fun.
