|
Now before I lay out the marinade recipe for deep frying a turkey, let me pass along some marinade pointers.
Injection Techniques for Deep Fried Turkey Marinades
First make sure the bird is thawed. It's unbelievably hard to inject marinade into a frozen turkey, believe you me!
Question: When injecting the bird do I just inject under the skin, into the meat or what?
|
The idea is to inject directly into the meat and into as many parts of the turkey as possible That means you want to inject any deep fried turkey marinades you use into like the breast, thighs, legs and wings. Yet you also want to make as few holes in the skin as possible to give the marinade as few ways as possible to come out. But this will allow the flavors to seep deep into the meat.
Also take it slow. There's no need to rush. The trick? Push the plunger slowly while gently easing the deep frying turkey injector out of meat.
Deep Fried Turkey Tip: Wonder why your turkey deep fried turkey turned black? Might be because you used a marinade that sugar in it. If you read the label you'll see that most marinades on grocery store shelves, have either sugar or frutcose as one of the first ingredients. Problem is the sugar burns when it seeps out.
Question: How much marinade does one need?
You're looking to inject about an ounce of marinade per pound of turkey. Give or take. And you're better off using a special meat injector. The needle is specially designed for injecting marinade into meat.
Finally give the marinade time to work it's magic. So inject and let it stand overnight in the frig.
Okay I lied. The marinade for deep fried turkeys is on the next page! Promise.
