Now this shortcoming can cost you a finger. Check any barbecue smokers for sharp edges or unwelded corners. Otherwise these will just lie in wait and grab you when you least expect it.

There's no such thing as too much shelf and table space. Better barbecue smokers don't cheat you here.

If it's fired by wood or charcoal look for an easy access ash pan. If it's easy to get to you'll empty it when you should. Plus it's easier to load up with lumps or briquettes or pieces of wood.

Can you adjust air-intake at the firebox? Or will you be hoping for the best?

Don't be baffled by baffles. If there's a steel plate baffle fixed between the main chamber and firebox you'll have more cooking area. And it will help equalize temps in all parts of the smoker.

See a drippings drain? Good to have you know. Since that also makes for easier clean up.

Here's a little thing that can have a big impact. Check the door hinges. And how's the latch? The last thing you need is for the door to fall off or the latch to break. While you're at it, does the door seal up nice and snug?

Don't forget to take a gander at the legs and wheels. Do they look like they're up to the task or not?

Match barbecue smokers to what you plan to cook. If you're feeding an army go with the bigger smoker.

Is the thermometer sealed and mounted at meat rack level. Knowing that the higher up it is the higher temps it will show. Which won't necessarily reflect the temps around the meat?
